Pie for Lazy People

Hey now..

This is what you do when you don't have a crust for the top of your pie...

You use puff pastry squares!

Yeah, I know it doesn't look "pretty", but who cares. I'm eating it and I'm not picky and neither is Bert or TC. They're just happy to have a dessert!

What happened was this. I had a jar of Stonewall apple pie filling (an Xmas gift from N and L) ling around just waiting to be used. Along with the jar of filling was the accompanying red fluted pie plate and a box for crust. Well, I didn't feel like actually making the crust which would involve touching dough and kneading it and all that.

No...I needed something quicker.

That's when I realized I still had one Trader Joe's pie crust left. I used the other one the week before for Mother's Day. My original intent was to make mango turnovers, but I got impatient and ended up balling the pie crust dough to make impromptu mini mango tarts. That was one pie crust put to use with the other forgotten until later that week.

I love Trader Joe's ready made pie crust. You can see the buttery pieces within the dough. When it bakes, the crust is so flaky and fragrant!

Well, this would make things pretty easy for me then. Place TJ's pie crust on pie plate. Dump apple pie filling on top.

I forgot that I didn't have that extra pie crust, so in desperation, I used some (thank goodness) already defrosted puf pastry squares, placed four on top of the apples, scored them with a knife and brushed with beaten egg yolk before putting it in the oven.

I believe it was at 350 for 40 minutes. Or maybe it was 375? In any case, it came out pretty good.

The puff pastry squares didn't rise up as much as they could have, but I was just happy that I had a makeshift pie top and that it was eaten!

True to form, I ate the crusts and left the apples for Bert.

Okay, I might have eaten a few of the apples, but overall, the fail ended up being a win.

One of these days, I'll actually open that damn box of pie crust and make it. But for the most part, I will continue to use Trader Joe's ready made pie crust for my lazy pie making needs!

I like the lazy method! Did it make for an extra crunchy top with the puff pastry on top? I love TJ's pie crust. I really don't ever feel the need to make my own.

Hi Mary - yes, me too!!!! The top wasn't as crunchy as I'd liked it to be, but it did have those nice flaky layers.

next time, i want to make my own crumb topping. that shouldn't be too hard.

I usually do crumb topping! I like that more than a top crust personally.

I like the crumb topping from those Julian apple pies. But yeah, that Trader Joe's crust is so good. I'd rather use that than make my own.
