Getting tired of Texas yet?
Here's probably the second to the last dinner post for this series...
The Ranch at Las Colinas. Like my composition? It took me a couple of shots to get the flag so it would display the star.

A shot of the entrance from the "valet" parking area. I should have taken a shot of the parking lot. It was packed at 6:45pm. We were lucky to find parking.

Pegasus? Not sure of the connection here, but took this shot of the entrance.

Menu:
Ooh, I noticed that in the lower left corner, "Born Bred and Fed in Texas"

The restaurant is pretty spacious. I tried to get the cactus in the middle but the lady got in my way.
(Damn that wench!)

Just inside to the left there's a seating area next to a fireplace. Looks like a nice cozy place to have drinks.

Can you say onion rings? My classmate's eyes widened when she saw this. She was expecting onion rings more on the scale of fast food places (i.e. Burger King, etc). These rings were HUGE. I liked them. If I didn't order chili I may have had more than one of these. My classmate's comment? "Too much!"
Holy shit! That is one big ass stack of rings! Kinda phallic too!)

Venison chili - aged white cheddar, red onion with jalapeno cornbread muffin. Oh yeah!
Venison Chili! This was great! As you can see, no beans here. Yup, I finished it all.

The insides of my jalapeno cornbread muffin that went with my Venison chili. The jalapeno didn't have much kick (which was good in my opinion) so I could enjoy the taste of the cornbread.
(In otherwords, no squiz for Bert)

My Hughes Springs Catfish Fillets - cornmeal crusted with housemade tartar sauce and Farmer's Market Veggies. The fish and tartar sauce was good but the cornmeal started weighing me down after 1.5 fillets. I ended up separating the catfish from the crust and just eating the catfish. The catfish was nice and not chewy.

Here's a full rack of ribs with mac and cheese. My classmate said that he liked this better than the Hard Eight. However, this place is a little more expensive. He said that the ribs were tender and had great flavor. The mac and cheese was creamy good.

see Hard Eight post). She said these were "excellent!" and that they were tender and more seasoned than yesterday's ribs.

The sweet potatoes. My classmate said this wasn't as good as hers. She said that this was different in that this one had some spice to it.

The Fried Pie. Apple filled with vanilla bean ice cream. My classmates really liked this. They said the crust was flaky and good.
And this should be all until Bert returns to good ole' San Diego {which he already has, at the time of this posting}...Hope you enjoyed his food posts...
