I really liked the look of her fruity bars and decided to dig up our old popsicle maker. This is one of two that I bought years ago at Target...
We haven't made popsicles in a while and whenever I think of how some places charge $2.50 or more just for some sort of artisanal popsicle (Viva Pops anyone?), I cringe inside knowing I could do the same for much cheaper. TC and I used to make our own popsicles using fruit juice, but never with chopped fruit.
It seemed easy enough. We already had some chopped up white nectarines, oranges and strawberries which was supposed to be a fruit salad (which also ended up being smoothie ingredients).

You can use any light colored juice. In our case, lite apple juice.

I don't have disposable sticks. This set came with reusable red and blue stick holders.

Fill about 2/3 of the way up and then pour in the fruit juice. Fresh & Easy did not have white grape juice so we used lite apple juice instead. To make pouring easier, I poured the juice into a pyrex cup.

Bert found the missing red stick AFTER I took the photo. No matter! A stick is a stick!

A dip of the plastic into warm water and a few patient twists and tugs is all it takes to get one of these babies out of their icy coffin.

Other than the occasional drip or two, these homemade ice pops were quite good, although a bit on the sweet side.
Here's Kirbie's post from a few days ago which inspired me to get off my @$$ to make this!
I'm already thinking about how to make different flavors using jackfruit, coconut, mango, calamansi, and pineapple (not all of these fruits combined though) ! Next time, I will also try making my own simple syrup. There are so many possibilies...
