We were especially curious about this cart...
(this photo was seen previously in the Good Food Here post).

This was Viking Soul, the brainchild of a Caucasian woman of Norweigan descent and her African American boyfriend/business partner.

They are billed as Portland's only Norweigan food cart and the only place where you can get "lefse", a traditional Norweigan flatbread made with potatoes, milk (or cream), and flour. I was lucky enough to have tasted lefse years ago. I have a colleague who is Hawaiian born and her husband is Norweigan. She learned to make lefse from her mother in law and I have to say that this version is just as good as hers.

I ordered one lefse filled with butter and honey ($2.50). Our drinks were hot cider for TC and iced lingonberry tea for me.

The lefse reminded me of a very soft flour tortilla but way better. The texture was so soft and powdery. The butter and honey were warm and melted within. Looking back, we probably should have bought two, but Bert and KDB were still full from our heavy early morning meal from Slappy Cakes. I made a mental note to come back here to try their lefse with the savory fillings...

TC and I both enjoyed this lefse. It was perfect for this cold and rainy morning...

The lefse looks terrific! You made me google it! :)
it was pretty good! we had a savory one a few days later. it'll be awhile before that's even posted. but yeah, super soft flatbread....i want to tr making this at home.
I *think* they sell vacuum sealed lefse at Ikea. They have one bread in the freezer and one in the refrigerator section...although I usually get a bag of the cardamom flavored cracker rolls when I am there...
hi cathy - good to know this! i may just buy one next time i'm up in the area just to try it...
