In this case lunch down in Encinitas. Here's a tip, try to find free parking at the train station lot on the conrer of Vulcan and Encinitas Blvd....
which we did. A coupon I had and a crudely drawn map as well in which I marked all of the different places we could check out (Plan A, B, and C) because I'm anal like that.

Right around the corner of the train station lot is this strip mall called Moonlight Plaza, where our lunch destination would be,

This is the view of the Leucadia Pizza Company across the street (taken after we had lunch). On the far left, you can see the infamous (but beautiful) "Surfing Madonna" mosaic. On the far right corner, you can see "Encinitas" spelled out in yellow flowers.

Above the restaurant was the office of the local paper, Coast News.

The coupon did not apply to any of the pizzas or salads but only the entrees so we chose Eggplant Parmesan and Cheesy Lasagna. Both came with a basket of garlic bread...

For better lighting and also to enjoy the fresh air, we sat out on their patio...

This was quite buttery and garlicky...TC really liked it but I didn't want to fill up on bread.

Our lunch entrees:

The Eggplant Parmesan was stuffed with mushrooms and came iwth a side of pasta with marinara sauce. A bit of a heavy meal. We had our cooler in the car since we knew we would have leftovers...

OMG, the cheese and basil on this....delicious. I loved the breading on the eggplant.

The cheesy lasagna was enjoyed mainly by TC. Those are two generous pieces in this huge bowl swimming in marinara sauce.

I don't know we've never tried Eggplant Parmesan in the past, but this was a pretty good version.

You can read more about the Surfing Madonna from from last year.

I love how the artist included the little angel holding up the Virgin; he is seen at her feet on the surfboard!

A quick visit to nearby Moonlight beach was next on our agenda, but first, some coffee up the hill...

I've only ever had pizza here, and even that was a long long time ago. That cheese looks so awesome, though! And wow that looks like so much lasagna. Sounds like a great deal you guys had! Encinitas is a really pretty spot to visit.
This was probably our first AND last time. Food was ok but not so awesome that I'd be back. Even with a coupon. Hey, you have a coupon for this place! :)
Encinitas is quite pretty but I still like dirty and gritty IB.
