Lofty Encinitas Roasting Works...
Simple menu. No flavored crap here.

Behind the glass were bags of coffee along with their roasting machinery. On the counters were their various methods in which to make coffee (Chemex was one). Forgive my ignorance for not knowing the names of these contraptions...

I loved the mad scientist vibe here. The folks who work here are super super nice and not pretentious assholes that make you feel dumb for asking questions. Their website says that this place is like a lab of sorts and it is their responsibility to educate their customers. I like that philosphy.
This place is on a hill and faces an upscale live/work center. Most of the outside tables with shade were already taken. It's nice to have an outdoor seating area; inside there were only a few tables.

My first cortado...

It was served on top of a small glass of sparkling water (not pictured). I read later that certain espresso drinks are supposed to be served with water and always with a demitasse spoon. In my case, I found the water helped cut the strong coffee flavor, which was tempered by the steamed milk. The coffee was so smooth that I didn't even need to use the spoon to add any extra sugar.

It was so pretty I almost didn't want to drink it but of course I did.

Believe it or not, there was still another coffee place I wanted to hit up before we left Encinitas, but that will be a future post!

I'm glad we tried this place out. They have quality coffee here, a great location next to an art store and their sister coffee shop across the street and so on. I had my drink while Bert was already coffee'd out from earlier. So, we headed towards the beach, but stopped at a nearby shop to get a cold drink for TC...

I totally thought it had a mad scientist's lab vibe, too! I spied cold brew, which is exactly what I'd get. I'd want hazelnut milk, too, but maybe not for $3 additional dollars. Whoa, nelly.
All those contraptions, heh heh. Oh shit, I didn't notice that hazelnut milk was $3 extra. Yokes.
Yikes. Darn one thumb typing on my phone.
