Make it into fried rice! So easy and brainless.
I had some leftover Chistorra (Spanish sausage used for paella), steamed carrots chunks, frozen peas and canned corn...
Saute one small chopped onion and let it soften. I then added the sausage to release the oils, then I added the rice (I had about 1 1/2 cups of day old white rice). I break up the rice before putting it in the pan. Add soy sauce to taste.

Since I didn't have fresh garlic (which I normally would have sauteed along with the chopped onion), I used garlic powder. Add fresh cracked black pepper. Mix in the vegetables last until they are warmed through. If you want to get extra fancy, add scrambled egg and/or chopped scallions (which I didn't do this time) and shrimp. No cubed Spam this time since I had the Chistorra.
For the Chistorra sausage, instead of throwing the pieces in as "rounds" (as they were originally sliced), I roughly cut the rounds into tinier pieces, so it has a confetti effect. It also stretches the "meat" in the rice. I didn't really put in a lot of the sausage but just enough to give the rice some flavor. I like to let the bottom of the rice get crusty and when I hear it sizzle, I'll turn over portions of the rice with a spatula and let that get crusty too...
Rice has been my latest "vice" - I pretty much gave it up last year and will only eat it once in a while, not everyday like I used to. But when it's fried like this, I'm tempted to have it everyday!

I made fried rice today too! Flavored with curry powder. It's what japanese call "dry curry"...
hi dennis - i should try that - curry powder in fried rice. sounds so good!
I can eat fried rice any time of day, sometimes more than once a day! I haven't been making much of fried rice recently since I've been indulging in pancit bihon, hehe.
I should make more of pancit bihon myself! i'm going to teach tc how to make fried rice...
