Seafood Friday - Week 3

For this week's installment of Seafood Friday, I made Bun with shrimp...

I also utilized a wonderful thing called "child labor". Yes, the child made the sauce (under my direction) and peeled, seeded, and sliced the cucumbers herself.

Other ingredients included greens from a salad mix from Fresh and Easy, bean sprouts, pre-shredded carrots, fried garlic, and crunchy fried onions, as well as chopped peanuts. The sauce consisted of fresh lime juice, sugar, water, chili garlic sauce, and Three Crabs fish sauce.

The bun was a fun and easy meal. Gets TC to eat her vegetables too! She made the sauce a bit too spicy so we thinned it out with more water and lime juice. She enjoyed squeezing the limes with our Mexican citrus squeezer. She has taken an interest in learning how to cook ever since visiting a friend's house and witnessing her friend make lunch for them. Well, TC is 11 1/2 now and she should be learning how to cook simple thing by now. Plus, it helps me tons when she's there to assist in prep.

Another item I made for tonight was Morey's Marinated Wild Alaskan Salmon (also from Costco). The cost was $17.99. There are six fillets, each about 6 oz each. They have a delicious seasoning with a kick to it.

I defrosted the fillets overnight and baked them in a 400 F oven for 22 minutes. It smelled so good!

Too bad we were full from the bun and shrimp, so the marinated salmon will have to be dinner for tomorrow night!

With a side of rice, salad, and steamed vegetables, this makes for a pretty easy and filling meal!

OMFG, only two more weeks until Spring Break! Can't wait!!! PDX here we come!
