Cioppino revisited

After seeing CAB's post on her top 5 memorable meals with her Cioppino recipe being one of them, I wanted to make it because I had a grip of seafood in the freezer that I wanted to use up!

To make this post go quicker, here's the link to my first attempt, which also links CAB's original post.

I played around with the ingredients again. Ralph's didn't have any leeks. The guy told me they'd get it tomorrow! WTF, so no leeks this time. Last time, I didn't use fennel, but this time I did. It gave it a different kind of flavor...

I used Halibut fillets from Trader Joe's, 1/2 lb of green lipped New Zealand Mussels, two packages of clams from Seafood City  (I made sure to rinse and clean them completely before placing in the soup. I also got rid of any broken shell fragments. That's not fun biting into those!). 1 lb of Trader Joe's jumbo sea scallops, and 1/2 lb of medium sized bay shrimp. I added the seafood last.

No sausage this time either (because I wanted to do so last time) or King Crab legs. The soup smelled so good and the fire roasted tomatoes I added gave it a nice smoky flavor. Another difference was I let the soup simmer for one hour before adding the seafood. My sister and her boys came over earlier this afternoon and we enjoyed the soup with a garlic loaf from Fresh and Easy!

We'll be having this soup again later tonight as we usher in the New Year, along with some Chicken Long Rice and Palitao.

it gives it a smokiness.

i'm not sure i liked the fennel in this one. too much of a licorice flavor. it's subtle, but i can tell it's in there.
