It's one of those recipes you can make the night before your actual party, saving you time...
This is pretty easy and involves opening a lot of cans. Ha ha. Seriously. But of course, you can substitute fresh fruit for the canned and fresh chicken as well, but hey, I like shortcuts sometimes. Drain the canned items by the way. You'll notice that the seasonings and add ins are not so precise. Eyeball it and put in as much or as little as you like. Play with it and see how it comes out...
Curried Chicken Salad
Ingredients:
3 cans of Kirkland canned chicken
1 can of mandarin oranges
1 can of pineapple chunks
1 can of whole water chestnuts
1 stalk of celery, sliced
sweet pickle relish
mayo
chopped green scallions
*one of the fruits can be substitute with fresh red seedless grapes (halved)
Season with:
Soy sauce
Curry Powder
cracked black pepper
Top with:
Slivered Almonds (add before serving)<----I totally forgot to include that yesterday for the party but it was ready to go!

Directions:
Crumble the chicken by hand first
Slice the water chestnuts into small chunks
In a large bowl, add the chicken and the rest of the ingredients (fresh and canned)
Mix well with a 1/4 cup of mayo (you can add more to taste).
Add some sweet relish into the mix
Add a dash of soy sauce
Add a few dashes of curry powder
Season with black pepper
Mix the bowl contents again and either chill until ready to serve or eat immediately...

You can serve this with crackers, or mini croissants (and make mini sandwiches) or with bread. It's got sweet, salty, and sour in here, as well as crunchy. I like eating it with crackers. Bert just had a sandwich with our leftover curried chicken salad.
Right now, we're watching "It's a Wonderful Life" on TV.
"I can't fly! I haven't got my wings!"
"I wanna live again!"
"Zuzu's petals!"
Time to have some Christmas pudding!

(photo was taken yesterday in the daytime)
This Christmas pudding, in a beautiful faceted jar, was a gift from the lovely Jenny from Jenny Wenny Cakes...we can't wait to taste it - Ooh, real English pudding!
