In fact, Mrs. Taquito declared this to be her most favorite soup ever. Wow, high praise...but then again, she doens't cook...
This was actually a surprise for me to learn that she didn't even cook at all. When she asked for the recipe, I kind of laughed and told her there really wasn't a recipe and I didn't really measure anything. She looked at me and said she didn't know what the word 'saute' meant and that she'd never sauteed anything in her entire life!
Well, now. Kudos to Mr. Taquito (Bert's kindergarten best buddy) for being the main chef!
Chicken Soup
(this was supposed to be Chicken Macaroni Soup but I changed my mind at the last minute)
Ingredients:
1 small onion, chopped
1 stalk celery, sliced
2-3 small carrots, chopped
1 potato, peeled and cut into cubes
water (2 1/2 cups or you can add more if you like)
Knorr roasted chicken base - 1 - 1/2 tbsp
1 can evaporated milk
chicken, cut into chunks (I used fresh breasts but I normally use the breasts of Costco's rotisserie chicken and hand shred it).
Macaroni (which I didn't use but you can)
Freshly cracked black pepper (fine grind is best) and patis (Philippine fish sauce/not pictured) to taste

Directions:
- Saute the onion
- Add the celery and carrots
- Add the chicken and lightly brown
- Add the water
- Add the potatoes
- Add the roasted chicken base (taste to see if it's to your liking and add more if you wish)
- Simmer 30-40 minutes
- Season with black pepper and patis to taste.

The soup was a welcome addition to the dishes at our dinner party. It's been chilly here in San Diego lately!
Right now we're watching "A Christmas Story"!
Classic!
"Frah-Jee-Lay" (fragile) - Must be Italian!
"You'll shoot your eye out!"
"Oh, fu....." (not "fudge")
