Thanksgiving 2016

One of these days, I'll actually make a turkey...

(stuffing, jicama pineapple slaw, cranberry sauce, sauteed corn with bacon, gravy, baked mussels and pancit palabok)

but until then...my parents' version is just so much better than mine ever could be...

Ar least that's my excuse.  He doesn't really "carve" it nicely but we don't really care over here.

Above, the turkey (duh) baked mussels with bacon (my sister didn't have Panko so...), and the palabok that she made.

Below, pepper steak, ham, mashed potatoes, some sort of stuffed fish (a neighbor brought it by, pineapple jicama slaw (a first for my mom; it was good too!), and stuffing.

Desserts included assorted glutinous rice cakes with shredded coconut on the side, cheesecake (Trader Joe's), various fruits, cheese and crackers (not really a dessert but it was there) and the maple pecan pie that I made.

My plate, which is devoid of any greenery because let's face it, no one eats salad on Thanksgiving so why bother.

The only thing green on that table was my mom's first and successful attempt at this refreshing pineapple and jicama slaw. She clipped the recipe from the newspaper and I have to say, I took most of this home!

My sis and I wanted to relieve my dad of a few cooking duties so we, which turned out being mostly me, made the pepper steak in the back yard kitchen. All of the ingredients were already prepped, sliced steak, garlic, onions, ginger and bell peppers along with oyster sauce. Pretty easy.

This was ready made crumbled bacon (from Costco) sauteed with red onions, along with one bag of corn and topped with green onions. Bacon with corn equals taste (Recipe adapted from Wandering Chopsticks).  So easy with the bacon already cooked and crumbled.

One of two maple pecan pies that I made. Crust was ready made. Deep dish, bought in desperation from Smart & Final because I couldn't find my fluted deep dish pie plate until AFTER I made these pies.

First pie smelled so good coming out of the oven. That roasted pecan aroma... I was the one who did that rough gouge to "sample" it.

Second pie had messed up crust edges. When I bought the two pack of crusts, I didn't realize one of them had broken. I thawed it out and Bert put the crust edges back together like a puzzle. This was the one we served at my parents' house.

Lots of food that day. It was nice to see my parents happy to see most of the grandkids there.

Here's the super easy recipe (from Epicurious)

Maple Pecan Pie

Ingredients:
1 cup pure maple syrup (I used the good kind)
3/4 cup (packed) golden brown sugar
3 large eggs
1/4 cup sugar
3 tbs butter, melted
1tbs all purpose flour
1 tsp vanilla extract
1 9" frozen deep dish pie crust
1 1/2 cups coarsely chopped pecans

Preparation:
Preheat oven to 350 F
Whisk first 7 ingredients in medium bowl to blend
Placed unbaked crust on baking sheet
Spread nuts over crust
Pour filling over crust
Bake until filling is set and slightly puffed, about 45 minutes to 1 hour)
Transfer pie to rack and cool completely.
