Asparagus + Yellow Squash Gruyere Tart

A few days ago, TC made this fabulous Asparagus Gruyere Tart..

Since we had some extra asparagus spears laying around...

along with a couple of fresh and small yellow squash, I thought I'd put both vegetables on the tart.

This time, I used my beloved Indo-European Brand. Unlike the "square" puff pastry sheets from Trader Joe's or the tiny (and crappy) Pepperidge Farm sheets, these were a nice and comfortable 10x15"! In fact, I didn't have to do any rolling out at all. I just unrolled the thawed puff pastry sheet on top of my trusty baking sheet and pinched the edges together (rather unattractively).

I used the leftover shredded Gruyere and Swiss and also added in some Mexican four cheese blend to spice it up a bit.

After the puff pastry sheet was scored and pre-baked in the oven, I thinly sliced the squash and got it ready for placement.

I just realized the baking sheet at the top is my bigger sheet (the photo below shows my favorite cookie baking sheet; it's so old!). I did two of these that evening. Anyhow, here's how it looked once it was done. Half and half looked quite pretty.

The only downside, Asparagus smelling pee. But if you can get past that, it's a pretty easy tart to make. It tastes delicious when still piping hot. I imagine you could add other types of thinly sliced vegetables like zucchini, eggplant, and even tomatoes. Something to experiment with in the future. Looks like this dish will be my contribution to Thanksgiving lunch next week! That, and store bought Pumpkin Pie (brother's request, not mine since I don't like pumpkin).

As I said before, puff pastry is awesome! Makes anything you make "elegant" and "lunch worthy".

It's Thanksgiving morning and I'm already hungry. The only thing different we do with puffed pastry is- put the raw dough on the cookie sheet then sprinkle the cheese on top and use a rolling pin, pushing the cheese into the pastry. Then bake. (I've done this and then cut the pastry into sticks and twisted into spirals and then baked-cheese sticks!).

It's also Thanksgiving morning...am waiting for the puff pastry dough to thaw out before making this recipe again. we will bring to my parents' for lunch. TC will make them. she is quite happy to know how to make this easy dish.

Thanks for the cheese sticks recipe! You just gave me a good idea on how to use up some extra cheese that I have! Yay!
