more specifically in the Costa Verde Center...

at a place that used to house the now defunct La Jolla Strip Club (as in meat, not nekkid chicks)...
Kirbie recommended Draft Republic, which is a Cohn restaurant. We were both curious to try their offerings.

It was quite spacious inside and the music they played was actually stuff I liked, classic/hard rock!

We shared adinosaur kale salad with chicken and six minute boiled eggs, maple/bournon glazed bacon wrapped pork belly skewers with apple chips and a trio of sausages, each with their own sauce/condiment underneath.

The Sausage Sampler was really excellent in terms of variety and flavor. There was a pork apple sausage with apple salw, a beef bacon sausage with potato salad and a kielbasa with red cabbage slaw. The most flavorful sausage was the pork apple. I really liked how each sausage had a different treatment.

Insert Theon Greyjoy/John Bobbitt and that Chinese dude whose wife cut it off TWICE jokes here:

The salad was memorable because of the six minute boiled egg which were nicely seasoned by the way...

These eggs weren't runny like mucuous, but had a bit more firmness to it. It passed the test, haha.
The maple bourbon bacon sticks were so good. I could have eaten more. The apple chips on the other hand didn't really add anything to the dish.

Kirbie posted on our visit; you may see her post here.

We saved some room for dessert which was across the street...
This place deserves a revisit with Bert who I'm sure would like their beer selection and menu choices...

Draft Republic isn't too far from my work and I've been wanting to go in for a visit. But I want someone to share the food with, I don't think I could eat a sausage sampler by myself (and that's totally what I would want to order). Those bacon sticks look awesome, too. Putting food on sticks makes it cuter, too, for some reason.
maybe you can bring the Minion! :) he's a guy, he can eat that stuff, i would hope. the bacon sticks, yes...pretty good.
it would have been nice to have some dark beer but i drove by myself. now, if i was with bert, we might have imbibed.
food on a stick = win.
