Soup for you!

The weather's been wacky lately...in the 70's one day, the next day, a storm. Winter in San Diego isn't really typical. Snow isn't that common here in Chula Vista. It hardly gets cold, but when does (and by cold, I mean anything below 65F, ha ha), it's time for soup...

Fortunately, our household isn't like this:

"Hoo wah!"

This show was so classic, but enough about Seinfeld...on with the soup!

A couple of weeks ago, I bought these bolillos from La Concha bakery to accompany...

this hearty Cioppino. It was also an excuse to use up some celery, carrots, potatoes in the fridge and some frozen seafood!

For this version of cioppino, I used some jump tail on shrimp, the seafood mix from Trader Joe's (included baby shrimp, scallops, and squid rings), and chunks of salmon and cod fillet.

I splashed in some cheap white wine from Fresh & Easy to give it more depth of flavor. I also let it simmer for more than an hour. Each and every time I make it, it's different but the result is the same - both my husband and daughter love it and we have soup for days!

That same evening, I also broke out these "pasteis de bacalhau", bought from my recent foray to the United Portugues SES Market. "Pasteis" is pronounced as "pahz-tayshz" in Portuguese. They were on sale for $3. There were ten salt cod fritters in there.

I hardly ever fry anything, so this was a rarity which surprised Bert. I'm always afraid of burning myself and I hate the clean up aspect. Anyhow, when I defrosted them, I left them out longer than I expected, so the pieces were kind of mushy when I dropped them into the oil. They were shaped like footballs. Some pieces kept their shape and some were blobby.

There were herb flecks in there...These were delicious! I've only had the homemade version from my neighbor, but these were a close second.

Not only was it clean out the fridge and freezer night, but it was also 'clean out the pantry' time! I had a package of this British Yorkshire pudding mix (sorry, no photo of the box) where you just add water, then pour fat (in this case, oil) into the muffin tin. You bake the oiled tins first then add the popover batter which gets all puffy. I put too much oil so the sides of the popover were kind of "fried" tasting. They didn't rise that high either since I had the wrong type of tin (I used my cupcake tins). We still liked how they tasted though!

In addition to the cioppino, we also had Smoky Corn Chowder, one of my favorite soups to make. I wanted to use up some half and half we had in the fridge.

OMG...I just love the bacon bits for this soup. Real bacon that I fried, not that fake baco-bitz crap from a bottle. That plus sliced green onions make for a nice soup topping. We had a little bit of both soups that night.
