Careful instructions were given and he ensured that dinner would be taken care of by the time I got home...
Which it was! Before I left the house, he was in the process of defrosting the fillets in a water filled container...
Here are the ingredients for Panko Crusted Honey Mustard Salmon:

About a half cup or so of Panko with chopped parsley. Our friend also added seasonings, but I forgot to let Bert know. In the future, you can season this with salt and pepper and if you want it to have a kick, some paprika as well.

Salmon fillets from Costco (or wherever you like your fish from) topped with Honey Mustard dressing...

The salmon is then topped with the Panko/parsley mixture. Press down on top of the dressing.

Bake at 425F for 20 minutes (depending on the size and thickness of the fish).

The topping was so nice and crunchy!

The honey mustard dressing underneath gave it a sweet but savory flavor. This was a really nice change up from our usual, mayo on salmon with French's onion soup mix on top. Bert did a really great job. These are also his photos. He was so thoughtful that he took photos of each step knowing that I'd want it for the blog.
The recipe is courtesy of one of our friends who brought this dish to the Christmas potluck from last week. I think he added some seasoning to the Panko mixture (salt, pepper and maybe some paprika). This was such a hit so I definitely will make this for the big family get together!
Yay for easy recipes!
