"Say, it's great to be here....in your room!"
Tonight I made two batches of a new cookie recipe wondering if they would pass muster...
This recipe was so easy. Only four ingredients! I saw this red velvet cake mix cookie recipe on Kirbie's blog a few years ago. Then recently, she posted a "healthier" version which replaces the oil and eggs with Greek yogurt. I tried making version a few days ago with mixed results.

So, this time, I went old school and did the not as healthy version using the oil and eggs. For the chips, I used 3/4 cup of these mixed color chocolate chips and added 1/4 cup of white chocolate chips (1 cup total).

Awww yeah...this came together quite nicely. The dough was not horribly sticky and it was easy to shape into balls.

The dough was thick but workable. I used my hands to form balls. I made about about two dozen from this recipe. You can probably make more if you make the balls smaller. Heh heh, small balls.

The tops have a nice crackly look. I made sure to strategically place different colored chips on the tops before putting them in the oven.

These came out so much better than the version I made with the Greek yogurt. TC is happy now that she can eat the rest of that Greek yogurt container. I didn't even know that she liked it since I don't buy it or eat it myself.
The cookies have a slightly crisp exterior and can bend easily but they are not mushy soft. The inside is a tiny bit cakey (well it is made from a boxed cake mix) and moist. Love this! I'm so happy they came out well, in otherwords, they are presentable and I am not ashamed to give these away!

Healthier Red Velvet Cookies, which uses Greek yogurt instead of oil and eggs. I found the lack of eggs and oil made the batter too dry. I think if I mixed it more, it probably would have come out all right, but
and the one that uses oil and eggs:
Red Velvet Chocolate Chip Cookies
These are going to be part of my new holiday cookie gifts, so thanks Kirbie for this easy and festive recipe!
Update - I brought last night's batch to work for the support staff and they loved it! Yeah, red velvet cookies FTMFW!
*Quote at the beginning is from Mike Wazoski "Monsters Inc" where he attempts to do standup comedy in a child's room instead of scaring him.

Ooo, nice! Jake would probably like these a lot. I'm crazy though and I'd probably do it "from scratch". They look so festive and pretty!
Thanks! I love the look of those multicolored holiday chips. I also cheated with making them pretty by adding some chips at the end. One of the secretaries asked how I got them to look so perfect and "unmelted". Ha ha.
