we wanted to try a savory lefse wrap rather than the sweet ones...

Looks like a burrito doesn't it? This is the only food cart that serves lefse, a Norweigan flatbread made from potatoes. It's incredibly soft and melt in your mouth tender. It's usually eaten plain or with butter or sugar (or as they offer it here, with butter and/or honey). The twist at Viking soul is that they use lefse to wrap savory items like meat, cheese, and vegetables.

Inside, Norse meatballs with Gjetost sauce (goat cheese) and pickled cabbage:

I didn't realize until we got back to our hotel suite that gjetost was goat cheese, which I utterly loathe! I didn't care too much for this. If it didn't have goat cheese, I probably would have enjoyed this much more. The slaw was a bit too pickled for my liking as well. It looked quite pretty though but I couldn't stomach it. Bert really enjoyed this while TC cared more for the sweet lefse (with butter and honey) than the savory filled one.

It almost looks like this has blueberry sauce in it.
Sigh. If only.
If you're ever in the area, try out Viking Soul's lefse. The only other times I've had lefse were from a former co-worker (of Hawaiian descent) who learned how to make it from her Norweigan mother in law.
