I bought a few sweet potatoes (white and garnet) and roasted them...
All you need is olive oil, fresh cracked black pepper and instead of salt, I used all purpose seasoning. I just washed and dried the sweet potatoes then chopped them into chunks. Notice I changed my knife? I took out the big guns, my Wusthof instead of the cheapo pink one that Bert got from Target (I love that pink knife!). It's heavier and cuts thicker vegetables much better...

Roast the sweet potato chunks in the oven at 350 F for about 40-45 minutes. I love it when the exposed skins develop a sweet caramelized crust. I paired these up with steamed carrots and baked salmon.

I baked the salmon with the ingredients at hand: soy sauce, sesame oil, grated fresh ginger, cracked black pepper and the juice from a few orange slices (the last orange from our tree). I also threw in some chopped green onion tops.

I let the salmon marinate for about an hour then put it in the oven at 350 F for 25 minutes. It smelled so good coming out of the oven! Sorry I don't have an "after" photo but it was delicious and a very "orange" meal!
I'll be using my crock pot more often as well. Can't wait! I feel like jumping out of my skin because I just want to be on vacation already! A few more days, then it's one week off for Thanksgiving!
