(characters from L to R: Foofa, Brobie, and Muno. There's another one but he's missing)
I wish these characters were around when TC was still a baby. They're so cute! Instead, we had to endure the Wiggles (the lesser of two evils as Barney was a dinosaur non-grata in our household).
During Thanksgiving break, N and her family were visiting from NY and while her husband was in Vegas on a 'guys trip', she hung around her parents' house (which is near my parents' house) with the baby. Well, this day she joined us for lunch at the house (I made bun with meatballs).
N also brought a surprise dessert from her mom (her parents are our godparents from our wedding). Isn't it cool how she cut out diamonds in the foil? This was Cassava Cake.

This was such a big tray of Cassava cake. We ended up giving half of it to our neighbors. Of course, I saved at least one corner for myself. I love the caramelized edges.

Although I have never made this cake before, my sister in law (the one who makes the awesome smoked fish) says it's so easy. So, here is her recipe:
Cassava Cake
Ingredients
2 packs of grated cassava (you can get this in the frozen section at Seafood City; it's about 1 lb per pkg) - thawed and squeezed dry
1 can of evaporated milk
1 can of coconut milk
1 jar of macapuno strings (coconut strings)
2 eggs
7 tsp of sugar
Topping:
1 can of condensed milk
grated coconut (for the topping)
Directions:
- Preheat oven to 350 F.
- Combine the grated cassava with the evaporated milk, coconut milk, macapuno, eggs, and sugar in a bowl.
- Mix well
- Pour into 9 x 13 pan or those disposable aluminum trays
- Bake 45 - 1 hour or until cake is set
- For the topping, pour one can of condensed milk on top and bake for an addition 10-15 minutes
- Let it cool and cut into squares.
- Serve with freshly grated coconut

I remember you showing us the shredded casava at Seafood City. The cake looks really good!
it is good! but sometimes there are fibrous pieces of the shredded cassava in there.
