Bday shindig with friends
This was the first of my 40th bday party shindigs...It was on the 11th, the day before Easter altho' my real bday was on the 13th. This is the very charming and lovely Jenny. She is a fellow food blogger and baker extraordinaire. Isn't her shirt so damn cute? You could get cavities just by looking at it! She made my birthday cake as well as cupcakes for my mini soiree with my close friends. Pictured with Jenny are the red velvet cupcakes.
The red velvets had cream cheese frosting and a custom fondant Chococat on top! Jenny was awesome in replicating my favorite Sanrio character. I have Chococat stationary, stickers, pens and even a mirror compact in the shape of Chococat. Hell to the yes! I don't care if I'm 40! I loves me my Chococat!
She also made Chocolate Raspberry cupcakes with chocolate ganache frosting. These were also superb. Everyone loved them! I saved a few for my co-workers upon our return to work from Spring Break. The red velvets were a hit along with these. I loved both of them!
We kept the party food simple - vegetable crudites with two kinds of dip - Ranch & Red Pepper Hummus:
More appetizers - fruit, crackers and brie. Ooh, you can see the empty cupcake rack. I hadn't put out the red velvets yet because of the cream cheese frosting. I was afraid it would spoil if I put it out too early.
Easy salad (spring mix from Costco!) with candied walnuts, dried cranberries and feta cheese. The dressings were from Fresh & Easy (Pomegranite blueberry as wellas Raspberry vinaigrettes):
Shanghai Lumpias ordered from JNC Pinoy Foodmart. Their sweet and sour sauce sucked because it was way too water. I had to make do with it because I'd run out of my fave La Choy sweet 'n sour sauce...
Salt and Pepper Chicken Wings from Mandarin, next to the now defunct Henry's on Otay Lakes Road. Gots to have them wings...there was lots of garlic in there too!
I would have made this myself but Bert insisted on me not cooking anything, so this Pancit Bihon was also ordered (same place where we got the lumpias). My mom's version is way better, but hey, it was quick 'n easy. Too much filler and not enough meat!
One shindig down - a test run for the next partay, if you will. My bday celebration with my actual family members would be the next day, on Easter at my mom's. The next weekend would be the bigger fiesta with my educator friends...I just don't like mixing groups of my friends. Plus, it was a lot more fun having separate celebrations!
