Seafood Friday #2 - Baked Cod with Lemon and Soy Sauce

It's the 2nd Friday of Lent and tonight I baked some cod fillets.  Nothing fancy. Just five ingredients.

Easy Baked Cod Fillets

Ingredients:
cod fillets
extra virgin olive oil
soy sauce (I used low sodium)
lemons (I used Meyer)
black pepper

Directions:
Preheat oven to 350 F.
Lightly brush olive oil on the cod
Brush (or drizzle) a little soy sauce and lemon juice on top of the fillets
Grind some cracked black pepper over all that and you're practically done.
If you want to make it look pretty, place some thinly sliced lemons on top as well.
Bake for about 20 minutes or until fish flakes easily with a fork.

I'm a lazy cook. What can I say?

For the main grain, instead of rice, I wanted to try something different. The other night, I picked this up at Trader Joe's, this Harvest Grain blend. The label is kind of hard to read (since my photo isn't that clear),but it's a blend of Israeli style cous cous, orzo, baby garbanzo beans, and red quinoa. You boil 1 3/4 cup ofwater or broth, add a pat of butter, then add half the bag (8 oz), bring to a boil, then reduce and simmer for 10 minutes.

I'm thinking that I can buy all these ingredients separately and make my own version...I liked the texture. This was my first time to try Israeli style couscous which is bigger and has a more "toothsome" texture (I just wanted to use the word "toothsome" for the first time) than the smaller grains I'm used to eating. The baby garbanzos also added texture as did the tiny red quinoa (also a first for me).

And there you have it...lemon soy sauce baked cod with a variety of grains and a steamed vegetable trio. Bert's mother joined us for dinner tonight. Everyone enjoyed it, or at least pretended to. TC especially liked the grains medley.

Haha, I cropped out the "chip" on the plate. We've had these plates since we were married ('95); they are "Madagascar" by Studio Nova which is the red headed stepchild of Mikasa...Mikasa Junior...Mikasa-lite...Hey, it was the mid 90's!

As much as I'd like to "update" our dinnerware, I've grown attached to the pattern and the evergrowing numbers of chips on the edges. Wait a minute....ah man, is it really happening? Am I turning into....(gasp!) my mom? She's got plates and bowls and tupperware that's at least three decades old!!!

Nice nail polish!

I'm going to get me a bag of Harvest Grains. I've pretty much given up on eating white rice except for special occasions -- whatever that might be!

hi darlene - thanks, heh, it was one of those cheapy $1 o $2 ones from the drugstore. tc has all these wierd colors.

i think the bag was $1.99 or $2 something. but i don't think that 1 lb bag is enough to last more than 2 meals. i still have to buy some quinoa and try your recipe.
