Seafood Friday #3 - Baked Salmon with Lemon and Soy Sauce

It's that time of week again, Seafood Friday.

Well, remember last week's recipe? Ditto that except substitute the cod with salmon. In this case, I used salmon fillets from Costco.  Sides were steamed broccoli and roasted sweet potatoes and yams. No rice or other grains.  Plain and simple.

We also had some of my vegetable soup. Despite it's sludgy appearance, it is actually quite filling and tasty.

The soup was made a few days ago in a fit of trying to cook meals for the week.  It's meatless and I used my best friend in kitchen, aka, the crockpot.

It's a non-recipe really.

I just sauteed some onions, carrots and celery in a bit of olive oil.
Then, I put the sauteed vegetables into the crockpot with some water and a bit of Knorr Roasted Chicken Base. Then, it was time to dump in a little bit of everything. In this case, green split peas, yellow lentils, regular lentils, orange lentils, a bit of barley, a can of diced tomatoes and a can of red pinto beans. I'm trying to incorporate more "fiber" and whole grains" in our diet. Part of that eating "clean" thing I'm going through.

For flavoring, I added some salt-free Mrs. Dash and some cracked black pepper. I kept it in the crockpot for about 3-4 hours on high.

You can add meat to this if you want - bacon, sausage, chicken, shrimp or all four!

So that's what we had for dinner tonight.
