Special occasion meals + baking fun during Covid-19 April - June 2020

I know I already posted this...

but here it is again...since it fits in with the "special occasion" theme...

That was my birthday dinner earlier this year, in April where we ordered takeout from Thai Fresh (see retroactive post here)This post not only lumps my birthday but also other special occasion meals such as Easter, plus Mother and Father's Day.

Easter - no frills breakfast.  Turkey sausage, eggs, bread (not toasted) and cucumber and tomatoes.

I roasted mini yellow potatoes for dinner later that day. They were so nice and crisp!

My sis roasted a tri-tip and it was so tender.   She also made the beef gravy...

A simple but hearty Easter dinner.

For Mother's Day, we had an early lunch - TC ordered sandwiches from Scrimshaw Coffee on El Cajon Blvd.  This was the Carnitas breakfast sandwich she got me. That was arugula in there. It actually worked with the carnitas and the soft boiled egg.

The sandwich was enjoyed along with a growler of Tahoe Gold cold brew (infused with Tahoe gold oranges and housemade rosemary syrup). The sandwich below was the one she got for Bert, called the Pantry Sandwich which had a lot going on inside.  In other words, I don't remember what was in it but it was good.

OMG, this cold brew was so good..

Mother's day dinner included takeout from Supannee House of Thai in Point Loma. I will do a separate post for takeout. These three dishes were ordered by my sister. You can kind of figure ou what they are by looking at them. That was so nice of her to order this feast for us.

Bert splurged with this Galaxy cake from Bread and Cie. It had to be special ordered. There was a gelee on top with a lovely purple, black, pink, and gold swirly design with glitter and also chocolate pearls. The inside was strawberry mousse. The cake on instragram had more black in it and looked more dramatic. This was....not the same....but it still was lovely and was quite delicious. The filling was so light and fluffy.

We shared some of the cake with my sister, my neighbor and also one of TC's friends, haha.  This was a lot of cake for just three people.

Father's Day this past June was TC making breakfast for her dad - fried rice with eggs, bacon, boiled eggs, hash browns, and sliced cucumber. We haven't had hash browns in a while...these were perfect and so crisp!

Lunch would be at my parents. My family, plus my sister and my brother all made food to bring.  I made and brought a slaw salad with crunchy noodles and almonds for the topping.

The spread at my parents - roast beef, bittermelon and shrimp, fried squid and wings (ordered), lumpia, my salad and all the way in the back, salmon that I also made (no close up photo).

Now from what I have read and observed, many of my friends in real life and also in the blog world baked like crazy during quarantine.  I didn't make my own bread (sourdough seemed to be popular) but I did manage to do a few things. Not that much...

This was my first and only attempt at flourless banana fudge brownies (from Kirbie's blog, see here post here).   I did not have the right size pan which was supposed to be square. What I had still worked but my parchment paper placement  was ugly.

The best looking pieces...this recipe was really simple. It used a lot of almond butter which can get quite pricey though. I will have to make this again soon. They were so fudgy and moist with banana goodness.

My sister made banana bread...but the difference with hers and anyone else's is that her has coconut. She is coconut obsessed and almost every baked items she does has coconut in it. My brother doesn't like it and I am ok with certain things she makes with coconut, like this bread (her snickerdoodles, no because I don't like snickerdoodles to begin with).

This was chock full of walnuts and ripe bananas. The coconut gave it another texture but I asked her  next time to make it without, ha ha.

This is my mochi macapuno cake - Mochiko flour has been hard to find lately! I could not find any at all at Seafood City after people started hoarding supplies.  I happened to find some boxes at a particular corner market in National City. Sorry, I won't divulge my secret but they have Nagaraya nuts, ube extract, my favorite brand of shrimp chips and Mochiko sweet rice flour in boxes GALORE. And for CHEAP too. Never mind Seafood City and Ranch 99! I'm going to this place for those certain items from now on!

It was a bit too browned on the top for my liking. I'm so picky. Corners of course were mine. I gave out the middle pieces to other folks though.  How generous of me, right? But really, whenever I bake, we three can't finish it so I usually give out what I make.

I also made my lemon cream cheese bars (no photo but you can look up older pix in my older posts if you really want to see it).  It's been too hot to bake lately so I may not be baking again until it cools down.  Upcoming special occasions will be the August birthdays which include TC (she will be 20!), my dad (81), my bro (he will be 50), as well as my friends D and TORC in August and September.

This heatwave sucks by the way. One more week until I start working from home again.
