FYI - With the pandemic, this place may not be doing in-house dining. Instead, they are doing Takeout according to the four lettered site.

In a small strip mall with a nearby Mexican market is a new (at the time) Filipino eatery...
Run by a husband and wife team, they offer Filipino classics but with a "twist", using higher end ingredients and putting their own spin on the dishes.

Look, it's the barrel man on their counter!

Vintage plates:

Let me start with the BAD first.
Although there were only a few people in the place when we arrived, we were made to wait while the waitress cleaned up and took orders. She took FOREVER. There was an empty wing that we could have sat ourselves at but we were told to wait. Behind us was a young man and his elderly grandmother. They made them wait too. We waited about 15-20 minutes and I even wanted to leave but ended up staying since we made this trip just to try these places I'd read about.
I felt so bad for the elderly lola. I couldn't understand why we were made to wait to so long when there was clearly a place to sit. There was only one server and one cook, so that was also another factor. But still, in terms of hospitality for that one visit, it sucked ballz.
So, yeah, that was my first impression of their service.
But we were here for the food.
This was the Kamatis - organic tomato salad with lettuce, beets, red onion, salted egg & calamansi dressing

So beautiful and refreshing. Except I wasn't too much a fan of the salted egg (which is a traditional viand). The dressing was light and refreshing.

Presentation does make a difference.

Organic chicken lumpia with housemade banana ketchup:

Wow, these were really great. Chicken is healthier than pork too! The wrappers were so thin and crisp. Fried well too and not greasy and gross. The banana ketchup was nice and tangy.
This is what I was curious about - Ube fries with calamansi mayo. This was most likely purple sweet potato rather than ube which is a purple yam native to the Philippines (hard to find).

Look at the thick cut of these fries...I was actually expecting French cut fries, not cross cut slabs. But I liked how they had that thin coating. Easy to pick up and dip in to the calamansi mayo sauce (nice twist). Very hearty. The portion was a lot so we ended up taking it back to the hotel.

Glad we stopped here but our meal could have a lot shorter if we had been waited on earlier and if they weren't short staffed.
