I took a photo of the page, then handwrote it later at home so I could tape it to my cabinet near the stove. Yeah, very high tech, I know...
This would be one of the "new" recipes I'm trying for today's family gathering...
Here are the ingredients...
TC dumped all of the ingredients into a bowl and whisked it all up.
The recipe called for only one cup of corn muffin mix. In the future, I will double it so that the pudding won't be as "wet". I have a thing against wet and soft things. I believe the pudding will be more "cake" like and firm if I use two cups.
I didn't have a 9x9 baking dish so I used two oblong Corningwares. One for us and one for the party.
I poured it all into one dish at first, but then decided on splitting it up so it wouldn't be as mushy because of the high walls of the dish. I wanted the pudding to be at a more shallow level.
Mmmm, the smell when it came out of the oven....
Corn Pudding
(recipe from San Diego Home/Garden Lifestles, page 108, May 2013)
Ingredients:
2 cans whole kernel corn with juice
2 cans cream style corn
1 cup corn bread mix
8 tbsp butter, melted
1/2 cup sour cream
2 eggs beaten
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp sugar
Directions:
- Preheat oven to 350F
- In a large bowl, combine all ingredients
- Mix well and pour into a 9" square baking dish (I dont' have one so I'm using 2 oblong dishes)
- Bake 1 hour uncovered until pudding sets and is golden brown on top
I imagine you could kick this up a bit by putting in diced jalapenos, or maybe some shredded pepper jack cheese. Next time!

I did something similar for a Christmas potluck using Ina Garten's recipe and the ingredients are similar. (I also won first place for a side dish.) Instead of sour cream there was load of cheese and I put a little cayenne pepper for spice. I'm craving corn putting now!
